I'm in a similar situation.
DNN 5.6.0.
Found this thread, so I upgraded to 5.6.1.

And... I don't see where I can allow "Add Event" as described above... what is the permission setting called that allows a user in a specific role access to only add new events, and not have access to any settings of the Events module?

If you give your users 'Edit Module' permissions they will have access to add events (moderated if necessary). They will not have access to the Module Settings.
