No, You can't ! The shipping provider compute the total weight of all products in the basket, then search for the corresponding scale in the shipping amount list (Admin Module). That's all. In your case the first corresponding line is used.

You can't link a product to a specific shipping info, nor have two shipping providers. In theory, you can create your own shipping provider, but it's not realy easy to do. In fact, you must create a shipping provider with a link by product and/or category AND be able to choose the right real provider (overnight or USPS). This implies many modifications, as well in the classes of the products as in the modification of the existing interfaces and the creation of a new shipping provider. A lot of work !
