Is there an existing way to see the users online over time in a table or chart? We have anonymous users taking surveys on our site and would like to know if there is an existing module (core or third party) that will allow us to easily see how many are on our site over time. Getting a snapshot of the number of users online about every 15 minutes would be sufficient to see how many users are online.

I don't think there's any way to keep the history of this currently, you would likely need to modify the Users Online functionality to store that data over time.
